Quick tomato and bean soup

I needed a quick, healthy soup recently, had a poke round the cupboards and came up with this. I rather like it.

Ingredients

  • One medium onion
  • Two (or more) cloves of garlic - you judge
  • 1 Tbs extra virgin olive oil
  • A large tin of supermarket Mixed Bean Salad
  • A one-litre carton of tomato juice
  • 4 tsp Marigold vegetable stock powder
  • 1 tsp dried oregano
  • 1 tsp dried basil

Method

  • Chop the onion and garlic quite finely
  • Fry gently in oil until slightly softened but not browned
  • Tip in the contents of the tin of bean salad
  • Bring to the boil and reduce the liquid slightly
  • Add the tomato juice
  • Bring to the boil
  • Stir in the stock powder until fully dissolved
  • Add the herbs
  • Season to taste

That?s all. For a slimming snack eat with dry fresh bread. Or sprinkle with grated or flaked Parmesan and drizzle with more olive oil.
